This really is quite simple,

with a template I can create a new site in seconds.

I created a separate folder called 'assets', set the template to copy that folder, then adjusted the slave base site's media path to use the assets folder instead.

All the joomla specific images are symlinked while each site has a seperate assets folder

Have a look in the latest JMS 1.2.13 that give new actions possibilities that just allow to select "copy" without changing any names.
This is true with images and templates folders.
